1 cup cooked winter squash 1 1/2 cups flour 1/4 cup brown sugar 1/2 Tbsp baking powder 1/2 tsp. salt 1/2 tsp cinnamon 1/4 tsp nutmeg 1 egg 1/2 cup milk 1/4 cup melted butter DIRECTIONS Preheat oven to 400 degrees. Mix the flour, sugar, baking powder, salt, cinnamon and nutmeg in a bowl. Mix the egg, squash, milk, and melted butter separately and then stir into the dry ingredients. Don't over mix. Just stir until the mixture is moistened. Spoon into greased muffins tins and bake 15 to 20 minutes. Makes 12 Muffins ENJOY! |
